July with a sweet flavor

Summer is finally here and that means sun, beach, pool, beers in terraces with friends and family, endless after-dinner conversations... But although heat is pressing, who can deny a sweet treat? That is why at Simaba Group we wanted to dedicate July's article to the new places for sweets and those that, even they are so new, you should already know them. 

 

Morreig

We start with Morreig, a newly opened local business located in the Gracia neighborhood that defends quality, artisanal production and seasonal products. Creativity and constant innovation is reflected both in the new products that are released and also the use of innovative ingredients and other more inclusive ones for all man kind of taste, diet or allergies. The main products are pastries and ice cream, although soon they plan to expand the gastronomic offer with new sweet options and some savory delicacies. 

The project is made up by three partners dedicated to the gastronomic sector for many years. Matthieu Atzenhoffer is the majority partner, who has the title of MOF boulanger (class of 2019), in addition to other important mentions in various competitions. And besides he directing Morreig, he also make consulting and training all over the world. 

The other two partners are Gemma Daina and Alba Ruiz-Ceamanos. Gemma is a graduate in Culinary and Gastronomic Sciences, while Alba is a pastry chef and a doctoral student on alterations in sensory perception. In recent years both have been teaching the degree in Culinary and Gastronomic Sciences, besides being part of the University's research group. Cotó cake

Cotó Cake is a small pastry shop located in the Eixample neighborhood in Barcelona, ​​specializing in only two varieties: the typical Japanese cheesecake with extraordinary sponginess and the "Choux", a typical French specialty that is characterized by having a very light and stuffed dough with infinite flavors. 

The owner, that has an Egyptian origin, daily prepares each and every one of the delicacies that are offered in the pastry shop, always using 100% natural origin products and ingredients only. Do not miss: the Japanese matcha, tiramisu or chocolate cheesecake, or the pistachio “Choux” to mention just one. Yummy! Location: Carrer del Consell de Cent, 187, 08015 Barcelona. 

 

Pastry gas 

Pastry gas is the pastry project of Gastón (born in Rosario, Argentina), who after 18 years living in Barcelona, ​​studying at the prestigious Hofmann school and working in various pastry shops, he ended up embarking on an adventure to create his own business of creative cakes on request, 100% personalized and with door to door delivery. 

Truth is that saying Gastón makes cakes is an understatement, because what he really does are edible masterpieces with a lot of color, textures and shapes always inspired by each of his clients and with a level of characterization that, when you open the box, all his customers can only say: WOW. 

In fact, he has received commissions from well-known personalities and brands such as Blanca Miró, La Manso, Cesc Escolà, Sol Pardo, Alba Usart, Miranda group, Blur group, Mietis Studio, Woodys eyewear, Plate selector, Eating patterns, Lefties, The Social Hub Barcelona, ​​among many others. And even Marie Kondo published one of his cakes inspired by her on her profile. 

“I like to dream and think that everything is possible when it comes to creating. My philosophy is that a cake, in addition to being pretty has to be pleasant on the palate and each bite must be balanced so that once you try it, you want to repeat it. That is why each cake I make is unique and has been specially designed for the person who is going to enjoy it.” 

Gastón recently has opened his new workshop in the Poble Nou neighbourhood, although if you want to try one of his delicious cakes you must always order it in advance. Do not miss: the chocolate and “dulce de leche” cake. Location: calle ciudad de Granada 44, local.

 

Cheesecakeria Bcn 

We end this round of sweet shops in Barcelona with Cheesecakeria Bcn, the personal commitment for a little over a year of Oriol Gil Agilar, chef and pastry chef graduated from the Joviat Higher School of Hospitality, and his partner Natalia, who although she has no culinary background herself, she manages and is in charge of all the administrative and communication aspects to publicize their star product, the artisan and personalized cheesecake. 

With this project, Oriol and Natalia defend craftsmanship at all costs, always betting on quality, local, organic and natural ingredients and always fleeing from ultra-processed and pre-prepared preservatives that of course do not enter their workshop.

Another very special characteristic of Cheesecakeria Bcn is its commitment to personalized treatment and service, always adapting its menu of more than 20 different types of cheesecakes, so each person can enjoy it according to their dietary, sugar-free, gluten-free, lactose-free or vegan needs... and always 100% handmade.
